Tropical islands. Palm trees. Coconuts. Can you picture anything more perfect right now? Let me give you a hint. A delicious coco nutty treat. These bounty bites are a twist on the classic chocolate we all know and love. The only difference is being home made you can make as much or as little as you like.
Coconut is rich in fibre and essential vitamins and minerals such as manganese, copper and iron. Because coconut is high in fibre and fat, it is known to support and stabilise blood sugar levels, by slowing down digestion. Coconut foods have really come to life over the last few years, allowing options for baking gluten free, and as a replacement for dairy as kefir, milk or yoghurt.
Bounty Bites (makes 8-10 depending on loaf pan size)
Ingredients
Coconut Filling:
2 cups desiccated coconut
¼ cup coconut milk
¼ cup and 1 TBS coconut oil
2 TBS maple syrup
1 tsp vanilla bean paste
Chocolate Coating:
½ cup cacao
¼ cup coconut oil
2 TBS maple syrup
Directions
- Combine all the coconut filling ingredients in a bowl.
- Mix until well combined.
- Press into a lined loaf pan and freeze for an hour.
- Remove from the freezer, cut into bite size portions.
- Combine chocolate ingredients in a bowl over boiling water. Stir until mixed.
- Dip coconut bites into the chocolate and place on a lined tray.
- Place back in the freezer for at least 30mins.
These are best stored in the freezer.
Tip: add some raspberries or blueberries to the coconut mix for a different take.
