Sunshine Smoothie

If you’re anything like me, you don’t want the warm weather to end and with it, smoothie season. Just because you can’t head to the tropics this year, doesn’t mean you have to miss out. Keep the sunshine in your life with this delicious, creamy smoothie that tastes like a summer’s day.

 

 

Did you know that pineapple contains an enzyme called bromelain, which is known to aid digestion of protein and also help reduce inflammation. This sweet, delicious fruit is a fun addition to a smoothie and is often forgotten. The zing from the lime juice adds a nice little kicker to the creamy flavour from the coconut milk.

 

 

Sunshine Smoothie

 

Ingredients

½ cup frozen pineapple

1 frozen banana

1/3 cup coconut milk

2/3 cup milk of choice

1 tsp lime juice

desiccated coconut to rim the glass if you’re feeling fancy

 

 

 

Directions

  1. Combine all ingredients in your high powered blender.
  2. Blend until thick and creamy (you can add more banana or frozen cauliflower if you have a really high powered blender)
  3. Enjoy in the sun with a good book.
