Recipe: Peppermint Bark

Nothing says Christmas like a candy cane. You only see them once per year and we all know what they signify, old Saint Nick is on his way. The sweet peppermint flavour of a candy cane is hard to replace, so this recipe utilises them.

 

There are many different recipes online for chocolate, but white chocolate is harder to replicate. The crisp white colour of store bought chocolate comes from the use of dairy, fat and sugar. This recipe uses cacao butter and macadamia butter to give it a creamy texture, but it misses out on the pure white colour.

 

 

Macadamias contain mono-unsaturated fats, which are wonderful for our health including supporting heart health, reducing our risk for diabetes and more. Did you know? For a very short period the macadamia trees flower, the flowers get pollinated and these pollinated flowers turn into macadamia nuts. But the nuts are not picked from the tree but are fully ripened when they fall. Oh mother nature, you incredible thing!

 

Peppermint Bark

 

 

Ingredients

  • 150g cacao butter
  • 150g macadamia butter
  • ½ tsp vanilla bean paste
  • 2 candy canes, crushed

 

Directions

  1. Heat cacao butter and about 1 crushed candy cane in a heat proof bowl over boiling water. (The candy cane will not dissolve too much).
  2. Once melted, set aside and cool until it is slightly warm to touch.
  3. Add macadamia butter, vanilla bean paste and about ½ of a crushed candy cane. Stir to combine well.

  1. Pour into a lined slice tray, you want it to be no thicker than 1cm (the thinner the better, but it all depends on your baking tray size).
  2. Place in the freezer for 8mins.
  3. Remove from the freezer and add remaining crushed candy cane to the top and place back in the freezer for an hour.
  4. Remove from the freezer and roughly chop or break into pieces.
  5. A great treat to eat Christmas night with friends and family.

 

Tip:

  • if you don’t want to use candy canes, replace with a little castor sugar and use a food-grade peppermint essential oil. It is dangerous to consume essential oil that is not food grade, so be sure to read the label carefully.
