Recipe: Pear Popsicles

Pear Popsicles

Oh heyyyy summer. I see you. As the days start to warm up, home made iceblock season kicks back in. Is there any better feeling than having an afternoon iceblock? The answer is no.

They are so simple to make too. These pear popsicles are only three ingredients, the combination of pear and kiwifruit give them a subtle sweetness. Pears and particularly their skin contain flavonoids (a fancy word for a nutrient). These flavonoids have been associated with a decrease in type-II diabetes. In this recipe, I blend the pear with the skin on to maximise the nutrient availability.

But what about little ol’ kiwi fruit? These guys are incredibly high in vitamin-c. In fact, just one kiwi fruit brings you close to 70% of your daily intake of vitamin C. As a nutritionist I love this nutrient, because it is involved in so much such as skin health, immunity, it’s well known for it’s antioxidant capacity and more. But mostly, because it is found in fruits and vegetables, therefore encouraging you to eat more of them.

Pear Popsicles

(makes 6)

Ingredients

3 pears

2 kiwi fruit

2 cups coconut water

Directions

  1. Peel the skin off the kiwi fruits.
  2. Combine the roughly chopped pear and kiwi fruit in a high powered food processor.

  1. Blend the ingredients and slowly add the coconut water, allowing time to continue to blend the ingredients.
  2. Strain the blended fruit into a measuring jug and then pour into your popsicle moulds.

  1. Allow to set in the freezer overnight. You will need to wait an hour or two before adding your paddle pop sticks.

Tips:

- You can use any fruit you want in this recipe, it mix and matches with whatever is in season.

- Choose a coconut water that is 100% pure coconut water, no additives.
