Mini Apple Crumbles

There is no denying apple crumble is delicious. But it usually comes as a larger pie size. These mini apple crumbles are the perfect size to enjoy as breakfast (just add greek yoghurt) or as a stand alone snack.

Super simple to make, these apple crumbles are rich in gut loving fibre from the stewed apples and oats to support a healthy digestive system, and cinnamon, a spice that supports blood sugar regulation. The inclusion of cinnamon with a carbohydrate rich meal slows the rate at which the stomach empties, thus reducing the rise in blood sugar after eating. Many people forget or dismiss how powerful herbs and spices are for our body.

 

 

Mini Apple Crumbles

(makes 10-12 depending on muffin tray)

 

Ingredients

  • Careme Vanilla Bean Shortcrust Pastry
  • 4 x green apples, peeled, cored and diced
  • 5 medjool dates, deseeded
  • 1 cup filtered water
  • 1 tsp ground cinnamon

 

Crumble Ingredients

  • 1 cup rolled oats
  • ½ cup hazelnut meal
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • 1 TBS maple syrup
  • 2 TBS macadamia nut oil

 

Directions

  1. Soak dates in warm water for 10mins
  2. Place dates, cinnamon and water in a food processor and blend until dates are blended.
  3. Pour into a saucepan and add chopped apples. Bring to the boil and simmer for 20mins.
  4. Preheat oven to 200°C.
  5. Oil a muffin or cupcake baking tray.

  1. Cut the shortcrust pastry to the size of your muffin mold, (I used a mug) and lightly pressed into the muffin mold.
  2. Spoon apple mixture into each muffin mold. Fill so that it is level or just slightly heaped.
  3. Combine oats, cinnamon, nutmeg in a food processor and blitz for a few seconds to crumb the oats.
  4. Add the hazelnut meal, maple syrup and macadamia oil, blend again for a few seconds until just combined.
  5. Top each apple mixture with the crumble and press down slightly.

  1. Bake in the oven for 20mins. Then turn off the oven and allow to sit in the warm oven for another 5-10mins.
  2. Remove from the oven and allow to cool before removing from the tin. I used a thin knife to pop each apple crumble out – do not turn out onto a cooling tray.

 

Tips:

  • serve with greek yoghurt or ice cream
  • these are designed to be crumbly, so make sure you have a plate or bowl
