Macadamia, Apricot and Sunflower Slice Recipe

Do you feel that? Spring is in the air. The days are going to get warmer, the sun is staying up longer and we’re on the count down to summer. What better way to kick off spring, than with this nutrient dense slice. The perfect addition to that picnic you’ve got planned.

 

 

The standout ingredients in this slice are the macadamias, apricots and sunflower seeds. Macadamias and apricots are a match made in heaven, but the sunflower seeds are a delicious bonus. Did you know that hundreds of sunflower seeds come from the yellow sunflower head? Sunflower seeds contain magnesium, selenium and copper, and are high in Vitamin E. A quarter cup of seeds provide you with over 80% of your daily Vitamin E requirements. And because Vitamin E is a fat soluble vitamin, the polyunsaturated fat (read – the oil within the seed) assists your body with the absorption.

So get ready, because this slice will fill up your belly, whilst you fill up your love cup.

 

 

Macadamia, Apricot and Sunflower Slice (makes 8-10 squares)

Ingredients

1 cup rolled oats

½ cup sunflower seeds

¼ cup LSA

½ cup macadamia nuts, roughly chopped

½ cup dried apricots, roughly chopped

1 tsp cinnamon

3 TBS ABC nut butter

3 TBS honey

2 TBS macadamia oil

1 egg white

 

 

Directions

  1. Preheat oven to 180˚C. Line a slice tray.
  2. Combine oats, sunflower seeds, LSA, cinnamon, macadamias and apricots in a bowl. Stir until well combined.
  3. Combine the ABC nut butter, honey and oil in a small pot and sir over a low heat, cook until just starting to bubble.

  1. Pour the mixture over the seed and nut mix. Stir to combine.
  2. Whisk the egg white and fold through the slice mixture.
  3. Firmly press into a pan, bake for 15mins and allow to cool in the pan completely before slicing.
