Christmas Rocky Road Recipe

OK so Rocky Road isn’t specifically a Christmas recipe and to be honest, this one is not super nutritious. But you know? It’s Christmas. The majority of this recipe does have some health benefits, so take that and run with it.

 

Do you know what I love about Christmas? Everyone finally relaxes a little and let’s life take over. They enjoy food and drinks with friends and family, there is a certain feeling in the air, everyone is just happy.

 

 

This recipe is an epic gift for family members! It is predominantly the combination of home made ingredients and amazing textures to satisfy you at every mouthful. It looks like there is a tonne of ingredients and steps, but you make this in under an hour.

 

Christmas Rocky Road

 

Ingredients

1 cup pistachios

1 cup hazelnuts

¼ cup goji berries

10 marshmallows, halved

¼ cut white chocolate chunks, roughly chopped

 

Choc Biscuits Ingredients

1.5 cups almond meal

1 tsp baking powder

1 TBS chia seeds

2 TBS cacao

2 tsp vanilla bean paste

2 TBS maple syrup

½ cup coconut oil

 

Chocolate Ingredients

1 cup cacao

1 cup coconut oil

6 TBS maple syrup

 

Directions

  1. Preheat oven to 180˚C.
  2. Combine dry biscuit ingredients in a bowl and stir well.
  3. Make a little well in the middle and add remaining ingredients.
  4. Stir to combine (I use my hands to roll into a giant ball).
  5. Allow to rest in the fridge for 15mins.

  1. Whilst the biscuit recipe is resting in the fridge, spread the hazelnuts out on a lined baking tray and roast for 15mins.
  2. Remove the hazelnuts and transfer to a bowl to cool.
  3. Remove the biscuit mix from the fridge and portion into 2-3cm balls and place on the baking tray. Flatten each ball and bake for 15mins.
  4. Whilst the biscuits are baking, place the hazelnuts in a container and cover with a lid. Shake the container to remove the hazelnuts outer skin.

  1. Separate the hazelnuts from their skin flakes and place the hazelnuts in a bowl. Add pistachios, goji berries, marshmallows and white chocolate.
  2. Remove the biscuits from the oven and transfer to a cooling rack, allowing them to cool for 15mins.
  3. Whilst the biscuits cool, combine the chocolate ingredients in a bowl and stir until well combined.

  1. Roughly break up 4 biscuits and add the biscuits to the nuts and marshmallow mix.
  2. Cover with the chocolate mix, stir to combine. Place the rocky road mix in a lined slice tray and place in the freezer for 1 hour.

  1. Portion into bite sized pieces and wrap with baking paper and ribbon to gift, or just enjoy as is yourself.

Tips:

  • if you can get shelled pistachios, you’ll cut your prep time down a smidge.
  • this is essentially a raw treat, so needs to remain refrigerated or in the freezer.
